Cauliflower is a seasonal vegetable, can be eaten in many ways. There are many recipes with only cauliflowers. By adding another vegetable or fish or meat, its taste, and food value increase. Cauliflower Eggplant Recipe is one such item. In this recipe, the main ingredients are cauliflower and eggplant. I add here fish for extra taste and protein. If you don’t want to add fish, you can cook the combination of vegetables with cauliflower and eggplant.

In Cauliflower Eggplant Curry with the fish recipe, I use Hilsha fish (National fish of Bangladesh). You can use any kind of fish like prawn, carp fish, or any other fish as per your choice. Hilsha fish has an awesome flavor and taste of fish itself. Hilsha is famous in Bangladesh and India for its silver outlook, shape, and taste. By its appearance and shape, Sardine fish although looks like Hilsha, but the taste is not the same.

Ingredients

  • 1 Cauliflower head
  • 2 cups of eggplant
  • 4 pieces of hilsha fish
  • 1 tablespoon oil
  • 1 tablespoon onion slice
  • 1 teaspoon garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon cilantro leaves

Instructions

  1. Wash cauliflower and eggplant. Separate florets from the cauliflower head. Cut
    eggplant into 2 inches by 2-inch sizes. Wash pieces of hilsha fish and keep them
    aside.
  2. Heat oil in a pan. Add onion slices to the heated oil. Stir it for one minute. Add garlic paste, cumin powder, coriander powder, turmeric powder, chili powder, and salt to the onion slice. Stir them and fry them for 1 minute. Add 1 cup of water to
    the masala mixture. Bring it to boil.
  3. Add fish pieces to the boiling masala. Cook until the gravy is dry. Then add another 1 cup of water. Bring it to boil. Take out fish from the masala. Keep them aside.
    Add cauliflower and coat with masala very well. Cook for 2 minutes. Then add
    eggplant pieces and stir the vegetables. Cover with a lid. Cook until the
    masala is dry.
  4. After drying add another 1 cup of water to the vegetables. Bring to boil and add half-cooked fish to the cauliflower and eggplant curry.
  5. Cook until the water becomes half or as you may keep gravy as per your choice. Sprinkle cilantro leaves over the eggplant and cauliflower curry. Turn off the burner.

Notes

If you want to cook vegan cauliflower eggplant recipe, you can avoid fish. Just follow the process without fish ingredients. You can add tomato and potato. I will make another recipe without fish and will share it with you soon.

Step 1

Add fish pieces to the boiling masala. Cook until the gravy is dry. After that, add another 1 cup of water. Bring it to boil. Take out fish from the masala. Keep them aside.

Add cauliflower and coat with masala very well. Cook for 2 minutes. Then add eggplant pieces and stir the vegetables. Cover with a lid. Cook until the masala is dry.

Step 5

Add another 1 cup of water to the vegetables dried up. Bring to boil and add half-cooked fish to the cauliflower and eggplant curry.

Cook until the water becomes half. Or as you may keep gravy as per your choice. Sprinkle cilantro leaves over the eggplant and cauliflower curry. Turn off the burner.

The cauliflower eggplant recipe is not too difficult. Serve with white rice or tortilla as the main dish.
