Instructions

  1. Pre-heat oven to 450 degrees Fahrenheit. Prepare a large rimmed baking sheet by lining it with parchment paper and spraying it with cooking spray.
  2. Process cauliflower florets until they reach the consistency of rice in a food processor and transfer to a large bowl. Stir together 1/2 cup cheese, flour, eggs, oregano, salt, garlic, and pepper. Spoon crust mixture onto one 10-inch circle and smooth with a spoon to create an equal layer (mold into a shape as desired). Bake until the bottom is a light brown color; gently turn over. Bake for a further 10 minutes or until uniformly browned.
  3. Distribute 1/2 cup sauce evenly over each crust and top with remaining 1/2 cup cheese; make top each with half of the pepperoni. Season with salt and bake until cooked through and cheese is melted (broil for an additional 5 minutes to brown the cheese if preferred); sprinkle with fresh basil. Each pizza should be sliced into four pieces.
